Mineiriana: a good cachaça takes timeAt Licuri farm (foto do envelhecimento)The Cachaça Mineiriana´s production follows the best practices and strictest standards, both in terms of quality and sustainability.All the sugarcane used in the process is planted at the Licuri farm, and harvested by hand. The sugarcane is cleaned on the sugarcane field and transported to the mill in order to be ground in less than 24 hours - which, ensures a controlled fermentation and provides the low acidity that characterizes the Mineiriana.Under the cold of Ipoema selected yeasts allow the production to get started. In a short time, a very light and floral aroma dominates the fermentation. The local yeasts, then, take the lead of the process from this point on, guaranteeing the terroir of the cachaça made in the land of the poet Carlos Drummond, as well as the exceptional chemical and sensory quality of the Cachaça Mineiriana.Distillation is done inside the two copper stills available at the Licuri farm. The direct fire is calmly fed by the distillery through the use of firewood and sugarcane bagasse. The slow and elaborate process ensures that the cachaça interacts with the copper surface in a way that brings even more sensory value to the cachaça.After the distillation, the cachaça goes to the storage vats made in stainless steel or jequitiba wood. Later, after the rest period that brings the desired balance, the cachaça stored in stainless steel will be bottled and labeled with the brand Mineiriana Classic.The cachaça stored in jequitiba, properly ripen by its rest in this noble wood, goes to American or French oak barrels (always in its first use, in order to ensure the potency of Mineiriana´s flavors), or to barrels made of Amburana or Balsamo woods, which also provide an awesome richness of aromas and flavors.From this point on, Ana Marta personally supervises each barrel and prepares all the blends at the right time. All those processes are done at the Licuri farm, which guarantees total control over the production and the unique quality of Mineiriana.
